What's For Supper?- Crockpot Honey Garlic Chicken Thighs & Sides

Who doesn't love a good Crock Pot meal? At our house we eat a lot of chicken. Recently, I have tried to find ways to use chicken thighs and legs more because they are more cost efficient.
My mother was a Food Service Director for the local school system for years. She had the food pyramid engraved in her head. Whenever it came to sides for a meal we normally had something green with plenty of fiber, a protein, a bread or grain and some sort of not as healthy side. Whenever I got married my husband was so confused on why I made so many sides and made such large meals every time I cooked. Now he doesn't question my cooking.. just the number increase on the scale.
I buy our meat/ poultry in bulk about once a month, separate it and then store it in the freezer. So I grabbed 4 Chicken thighs out of the freezer the night before and put it in the fridge. By the time I wanted to throw them in the crock pot, they weren’t full thawed. I defrosted them a little more in the microwave and threw them in! You aren’t supposed to cook raw food that is frozen in a crock pot. It doesn’t get to a high enough temp for long enough to kill germs!
Ingredients:
4 Chicken Thighs
1/2 Cup Honey
Soy Sauce to taste
Kinder The Blend Seasoning ( garlic, pepper and salt )
Minced Garlic
Parsley ( I used fresh for my herb garden)
Ketchup
Add the chicken into the crock pot along with the honey, soy sauce, minced garlic, parsley and ketchup. I cooked it on high for 3 and a half hours. I stir it ever so often to make sure its cooking evenly. DONE! That easy!
The Sides consisted of HOME GROWN FRESH Broccoli. I am in love with fresh broccoli and I think it will be something I add to my garden next year. We bought this from a local Farm Market— Campbell’s Farm Market ( be watching for a post about this market)! I just boiled it and added NO seasoning because it was perfect the way it was!
We also had baked carrots. To make these guys I just take some raw baby carrots toss them in olive oil and add whatever seasonings you like. On these I used Kinders The Blend Seasoning and Slap Ya Mama ( mild ) . I then throw them in the air fryer for 15 min on 360 degrees and toss them in the basket every few minutes until soft.
I laid the chicken on a bed of white rice. I am new to the rice cooking world. I used white minute rice and cooked it in the microwave. I did not season at all and after the chicken was done I put some of the drippings from the chicken into the rice to flavor the rice .
Ta Da! Supper is served! Easy and plenty of veggies!
